McCann’s Oatmeal Pancakes
Approx 12 Pancakes – 4 Servings

Ingredients
1 1/4 cups of McCann’s Quick Cooking Oatmeal ( I use large flake oatmeal)
1 cup plain low fat yogurt
1 cup soy milk
1 teaspoon honey or sugar
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, beaten
1/2 cup chopped walnuts or pecans
Preparation
In a large bowl, combine oats, plain yogurt, low fat milk and honey. Stir in flours, baking soda and salt. Add beaten eggs and mix well. Add chopped walnuts. Batter will be thick.

Heat a large non-stick skillet or griddle over a medium heat. Spoon about 1/4 cup batter onto hot griddle for each pancake. Cook until bottoms are browned and bubbles on top start to pop, about 3 minutes. Flip and cook until other sides are browned, about 2 minutes. Repeat with remaining batter. Add additional milk if batter becomes too thick.
Serve hot with maple syrup and/or fresh fruit.

I nuke a mashed banana for 15 seconds and use that as a topping. All my birds love these pancakes. We just had these yesterday and I freeze the rest. I also put in some flax seed. Make sure honey is pasteurized. That is very important. Botulism is a problem in unpasterized honey.

When I made these yesterday, I had not had any bread or bread like foods for over a month. I went on the Atkins diet for a few weeks to get me back on track. Huge construct here but my birds hated it. LOL No toast, no pancakes, no pasta, I mean really what's a bird to do.

But yesterday, even with all that healthy crap in them, they were the best pancakes I've ever had in my life. LOL

Also, if you nuke the banana, please stir it with your finger to make sure it's not too hot. You could easily burn a crop if you don't.

okay got to ask are these for people to eat too? Or just for our spoiled feathered friends? I think if my hubby caught me in the kitchen making pancakes he could not eat, he would have a fit. He is still waiting for me to make him his bread.

Absolutely Shiloh. I try to make things that my birds can share with me. You don't think I'd be eating anything that healthy, do you? If it weren't for the birds, I'd be having me good old fashioned white flour buttermilk pancakes. LOL

They are very easy to make. Try them, your husband will love them.

So is honey an ok sweetner to use in most anything? like say Birdy bread? how about molasses?

Honey is OK as long as it's pasteurized. You can also use unsweetened apple sauce. I don't think I would use molasses because it is high in iron, I think. I buy unsulphured molasses to bake with but I still wouldn't give it to my birds.

Great pancakes. Bogie, my wife Sue and I all ate them this morning. Bogie,the fussy eater, really dug in to his, topped with the mashed banana. Its so good to see him eat with a bit of gusto.
